There are two things moms want on Mother’s Day. A day off without their kids ( yes it is true, we would love a day to ourselves…or a week on a tropical island even) and or breakfast in bed without having to clean up the kitchen mess afterwards. I cannot guarantee either of these but I can guarantee she will love this incredible tropical breakfast feast. Thick cut sweet brioche soaked in a coconut custard cooked with crispy coconut chips, tropical guava syrup, whipped cream, crispy bacon, hot coffee and guava-rosé mimosas. I actually wouldn’t even mind cleaning up the mess in the kitchen if my family made this for me on Mother’s Day.

I am a big fan of tropical flavors as you all know, especially for Mother’s Day. The coconut brioche French toast is tropical but not overly sweet. The thicker cut brioche soaks up the custard nicely without falling apart. The thicker the bread, the longer you can soak it and the richer the flavor. The coconut chips add a nice crunch to the french toast as well as another layer of coconut flavor. The guava syrup is a must and super simple to make.

I love a good mimosa, which are a must on Mother’s day for those who imbibe, and I am not a fan of orange juice so guava juice it is. I do love pineapple or mango mimosas as well, even pineapple and coconut champagne cocktails work for me too. But guava juice with sparkling Rosé? Amazing. I discovered this sparkling Rosé at Cost Plus World Market one day when I was looking for another Rosé recommended by a friend. I couldn’t find the one she told me about but I grabbed this one with a few others and I am so glad I did. It is so delicious on its own but combined with guava nectar or juice is even more amazing. Something I will be sipping on all day on Sunday.
