I am a little giddy about this Jamaican Jerk Chicken Drumsticks with Pineapple Mango Slaw recipe today for several reasons. One is that it is my guest post for Better Homes and Garden’s site, Delish Dish.
Another is that it is ALMOST summer and that means lots of grilled dinners, fresh salads, farmers markets, my favorite stone fruits like white peaches and cherries, meals eaten on the back patio, lots of popsicles consumed, lots of ice cold beverages, pool and beach days, sleep in late mornings. Well probably not that last part, My kids are up early. REALLY early.
And another means that its HOT sunny weather for the next few months. I love the heat here in Vegas. A friend of mine calls me a tortoise since I love the heat so much. Ha ha.
I was thrilled to be asked to do a guest post for Better Homes and Gardens. There is good chance I squealed a little at the email. I chose to adapt a recipe that I had spied in their chicken recipe index , Jerk Chicken and Slaw, and make it more my own. We love grilling chicken drumsticks, and of course I had to add my own touches to the slaw to make it more tropical. This meal was so good – it will be in regular rotation in my house for sure! My kids love when I make chicken drumsticks because they are all about eating with their hands a not a fork or spoon, so the more hand held portable food I make the better in their eyes. I love them served hot the day we make them or cold straight out of the fridge for leftovers, I’m not picky.
