We love to eat apples in my household but most often they are either eaten as is, sliced and schmeared with peanut butter or chopped up in pancakes. I spied these giant honeycrisp apples at the store and knew that I wanted to make stuffed apples with them. I had a package of cranberry almond couscous from Cost Plus World Market and knew that would be perfect for stuffing the apples with. The couscous is made first, apples cored then stuffed, baked and sauce is made while the apples are baking.
Cranberry Almond Couscous Stuffed Apples with Vanilla Ginger Honey Sauce is a stunning side dish AND a lot easier to make than they look. I am all for recipes that yield a large wow factor while spending as little time in the kitchen as possible. I found that the couscous mix, while super tasty, was a bit skimpy on the almonds and cranberries. I added in more slivered almonds, dried cranberries and diced apple that I used from the cored out sections of apple. I wasn’t about to waste any of the cored out apple. I love the extra flavor and texture the apple gave to the couscous filling.
