For a quick and easy to make recipe that looks like you spent a ton of time in the kitchen but didn't, these No-Bake Mini Lemon and Raspberry Tarts are sure to be a hit this Easter or at any spring time party.
These mini tarts have a surprise white chocolate filling and the curds used to make these are so good. I love making homemade curd but when I am in a pinch or don't feel like making it, the Traditional English curds from World Market are my go-to. Minimal ingredients and amazing flavor. It's hard to not sit down with a jar of curd and a just a spoon and only eat one bite. I also love adding a few spoonfuls of curd to coconut gelato and swirling it around before digging in. So good.
For these no bake mini tarts I decided to go with both raspberry and lemon. I was having a hard time deciding which one to use so why not do both?
The lemon curd is more on the tart side than the raspberry is but not so tart you make a sour face when you bite into one of the mini tarts
The best part is the premade mini tart shells. They are like a delicate shortbread. Perfect for a variety of fillings and flavors.
Since these are easy and fast to make you can make them up the day of your Easter or springtime party. You can make them the night before but I suggest only filling the tart shells with the white chocolate the day before then adding the curd and whipped cream then chilling before serving so the whipped cream looks its freshes and doesn't weep into the curd.
