Creamy Cilantro Lime Tahini Dressing

Tangy creamy easy to make dressing with just a few ingredients thats perfect for salads, bowls, wraps, tacos and more.
Makes about a cup and a half of dressing (350 ml)
Prep Time 5 minutes
Blending time 2 minutes
Total Time 7 minutes

Ingredients
  

  • 60 G Tahini ⅓ cup
  • 60 g Cilantro - stems and leaves ½ cup packed
  • 48 g Rice vinegar ¼ cup
  • 79 g Oil - olive avocado, or other light oil for dressing (⅓ cup)
  • 4 cloves Garlic - peeled and minced
  • 1 Lime - zest and juice - about 2 tablespoons juice
  • ½ teaspoon kosher Salt
  • 3-4 Tablespoons Water

Instructions
 

  • Add everything but the water in a blender. Taste and add anymore tahini, oil, vinegar, salt or lime if you like. If a thinner consistency is desired add water one tablespoon at time until you get the consistency you like. Transfer to a jar with a lid and chill completely. The dressing will thicken more once chilled.
  • You can add in the cilantro just half at a time. Blend smooth with half then add the rest in and only blend until combined to have larger pieces of cilantro in the dressing.
  • Dressing will last up to two weeks kept well chilled.
