Ingredients
  

Sunflower Butter Oatmeal Bars

  • Makes 18 bars

Ingredients:

  • 2 ½ c quick cooking oats gluten free
  • ½ c roasted sunflower seeds divided
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • 1 cup raisins
  • 1 c Maranatha Sunflower Butter
  • ½ c raw honey
  • 2 ½ c quick cooking oats gluten free
  • ½ c plus 2 tablespoon unsweetened shredded coconut
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • 1 c Maranatha Coconut Almond Butter
  • ½ c raw honey
  • 2 tablespoon slivered almonds

Instructions
 

For the Sunflower Butter Bars

  • Line an 8x8 pan with waxed paper
  • In a medium bowl mix together the oats, all but 2 tablespoon of the sunflower seeds, cinnamon, salt and raisins. Set aside
  • In a saucepan over low heat combine the sunflower butter, honey and vanilla. Stir until well combined and smooth. Pour over the oatmeal mixture in the bowl and stir until all the oatmeal is coated. Spread mixture into the prepared pan making sure there is even thickness. Sprinkle the remaining 2 tablespoon Of sunflower seeds over the top and press gently. Chill for 2 hours. Removed and cut into bars. Keep refrigerated in an airtight container.

For the Coconut Almond Butter Bars

  • Line an 8x8 pan with waxed paper
  • In a medium bowl mix together the oats, cinnamon, ½ cup of the shredded coconut and salt. Set aside
  • In a saucepan over low heat combine the coconut almond butter, honey and vanilla. Stir until well combined and smooth. Pour over the oatmeal mixture in the bowl and stir until all the oatmeal is coated. Spread mixture into the prepared pan making sure there is even thickness. Sprinkle the slivered almonds and 2 tablespoon of remaining coconut over the top and press gently. Chill for 2 hours. Removed and cut into bars. Keep refrigerated in an airtight container.

Notes

Prep time includes chilling time. Hands on prep is 5- 10 minutes. Hands off prep is 2 hours (or more if you leave them in the fridge longer) You want to chill them to let them set up so they are firm enough to cut
