Persimmon and Medjool Date Green Monster Smoothie and a Huge Cookbook #Giveaway

Green Monster Smoothie with Spinach, Persimmon and Dates Yield: 2 servings Prep time 10 min Total time: 10 min

Ingredients
  

  • 2 cups unsweetened organic almond milk or coconut milk, water
  • 1 frozen banana
  • 2 scoops vanilla whey protein powder I use FIT 365 organic grass fed whey (optional)
  • 3 medjool dates pit removed and roughly chopped
  • 3 cups fresh spinach
  • 2 persimmons stem and leaves removed, sliced into quarters *
  • 2 tablespoon chia seeds
  • 1 c ice
  • 2 tablespoon coconut oil

Instructions
 

  • Place all in blender in order that is listed except the coconut oil. Blend well and stop blender to scrape down sides if needed. With blender on medium speed slowly pour in the coconut oil in a thin stream until well blended. Pour into glasses and serve immediately. Enjoy!

Notes

*Note: There are two common types of persimmon seen in stores. Fuyu and Hachiya. Fuyu are lighter in color and rounder, they are the ones I used in this recipe. They are firm in texture and crunchy like an apple. Hachiya are more heart shaped and darker orange. They are best when softer to the touch, think overripe tomato squisyness. Both are excellent.
