Jam Filled Aebleskivers ( Danish Pancakes)

Jam Filled Aebelskivers (Danish Pancakes) Makes 35-42 pancakes Each batch is 7 pancakes taking about 6 min each batch to bake.

Ingredients
  

  • 2 C all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 tablespoon Sugar
  • Zest of one medium orange
  • 2 cup buttermilk well shaken, room temperature
  • 2 teaspoon vanilla extract
  • 4 eggs separated
  • 3 tablespoon melted butter plus extra for pan
  • 1-2 13 Oz Jars of Bonne Maman Four Fruits Jam divided
  • ¼ c maple syrup
  • 3 tablespoon orange juice
  • powdered sugar for garnish

Instructions
 

  • In a large bowl whisk together the flour, baking powder and salt. Combine the sugar and zest together in a small bowl and rub between your fingers to release the orange oils into the sugar, add that in to the flour mixture,
  • In a small bowl whisk together the egg yolks, butter, vanilla and buttermilk. Combine with the flour mixture and stir until well mixed.
  • Beat the egg whites until semi stiff peaks form ( just past soft peaks) and gently fold into the batter until almost no more white streaks are left.
  • Let sit for 5 minutes.
  • Preheat Aebelskiver pan. Brush each well with butter. Using a tablespoon and a half sized cookie scoop add a scoop to each well starting with one side and filling the middle last. Then spoon in a heaping teaspoon of the Bonne Maman Four Fruits jam into the center of each and top with a little more batter just to cover the jam. Let cook for about 2 minutes then using two this spatulas, chopsticks, butterknives really anything that will gently turn then and turn each one. Start by tipping it up so the uncooked batter fills the well and then flip all the way. Cook another 2 minutes. Flip again and make sure each side is evenly cooked, starting to turn light brown. Remove from the pan and repeat with the remaining batter and jam ( there will be left over jam) making sure to brush each well of the pan with butter before starting a new batch.
  • In a small pan add in ½ cup Bonne Maman Four Fruits Jam, the maple syrup and the orange juice, bring to a boil then simmer for a few minutes. Remove from heat and transfer to a small bowl
  • When the Aebelskivers are done, dust lightly with powdered sugar, drizzle with a little syrup and serve immediately.

Notes

Notes: when turning the pancakes slide whatever utensil you have under the pancake to see if its starting to brown before flipping. Once flipping do so not too fast so batter doesn’t fling everywhere but also not so slow that the jam spills out. The jam might spill out a little b it once cooked ad that is ok. It takes a a few times to get used to flipping without too much spilling, but once you get out down its very easy to do.
