Notes

  • You can find Li Hing Mui powder at any well stocked International or Asian Grocery or online. I get Li Hing Margarita salt from www.saltywahine.com, and it can also be found on retailers in Hawaii and on Amazon. A little goes a long way and it lasts forever. I love sprinkling it on fruit such as pineapple and mango as well as using in cocktails.
  • The pineapple gum syrup is from Small Hand Foods. You can find it at any well stocked liquor store or online.
  • The coconut liqueur I used is Kalani Coconut which can also be found at many well stocked liquor stores. You can substitute another brand of coconut liqueur if you can't find this one but use a liqueur, not a generic brand of coconut rum.
