Pineapple White Wine Slushies

Just two ingredients for these amazingly delicious and refreshing wine slushies

Servings 4 -6 servings

Ingredients
  

  • 5-6 cups pineapple 1-2 pineapples depending on size
  • 1 bottle tePā Pinot Gris or other Pinot Gris well chilled

Instructions
 

  • Remove the stem and peel the pineapple. Or pineapples if using smaller ones. Quarter and slice out the core. If the pineapples are less ripe/sweet save the cores or compost. Slice the quarters into wedges and freeze. This can be done a day, a week or even a month ahead of time. You could freeze several sliced pineapples at once if you have the freezer space. 
  • Place 6 cups of pineapple in a blender and add in the bottle of Pinot Gris. Blend until thick. Taste. If a sweeter drink is desired add in a little simple syrup or pineapple juice. Pour into glasses, garnish with a pineapple wedge and a sprig of fresh mint and enjoy!

Notes

Like I mentioned in the post the possibilities really are endless. I love to add a little fresh lime juice or sweetened calamansi lime juice. You could add in coconut water or even coconut milk for a Pina colada like slushy. Mango or passion fruit juices are also excellent along with the white wine.
