Place shallots, garlic and 3 tablespoon of the ketchup in a food processor and blend into a paste. Add that mixture along with the rest of the ingredients to a sauce pan and bring to a boil over medium-high heat. Lower heat and simmer 45 min or until reduced by ⅓ and has significantly thickened. Taste and add salt and more spices if desired. Let cool in pan and then transfer to a glass jar and keep refrigerated until ready to use.
Notes
Make sure your coffee is a stronger brew, anything mild or weaker brewed won't give as rich of a flavor.
