I am such a sucker for breakfast foods and these Aebleskivers AKA Danish pancakes are amazing. I am pretty sure I could eat them daily, and I am looking forward to them on this upcoming Mother’s day. This post is sponsored by Bonne Maman.

When I was asked to make a recipe with one of Bonne Maman’s jams I was given a choice of 4 jams and one would be chosen for my recipe that I was to create. I had my fingers crossed I would be assigned the Four Fruits Jam. Its my family’s favorite and I knew exactly what I wanted to make. Aebleskivers. Bonne Maman jams are so good, I have tried a few flavors now and there are so many more I want to try. They are made in France with simple ingredients, nothing artificial, no high fructose corn syrup or weird fillers or additives and they are now project non-gmo verified which is important to me. Plus the jars are super cute. I like cute.

Mother’s day and my birthday have always been really close, some years my birthday has even landed on mother’s day, so the two were often combo days growing up – sharing it with my mom and then now as a mom myself I get the combo mother’s day and my birthday all in one. I would rather split them up just so I can have two pancake breakfasts, but with our schedules now, kids in school, life etc. I will be happy with just one. Especially if my husband and daughters makes these Aebleskivers for me. Which I hope they do. HINT HINT.

The batter is pretty similar to my waffle batter, and I often make regular pancakes with whipped egg whites added into make them even more fluffy. We love fluffy pancakes and waffles. Its a super easy batter to make, not complicated at all, but you do end up with a few dirty dishes. Definitely not a one bowl recipe.

Having everything at room temperature is key especially since the recipe calls for melted butter. There have been so many times that I have not been patient enough to wait for everything to be room temperature and I add in the melted butter and it reacts with the cold eggs and milk and clumps up. You think I would learn. Or at least be more patient about it more often.

I love adding in zest to recipes to give them an extra layer of flavor. I learned a trick long ago to mix the sugar and zest together to really bring out the flavor and release the oils in the zest. I might not wait until eggs and milk are room temp, but making sure the zest and sugar are well mixed is a step I never miss. With the egg whites I beat them a little stiffer than most recipes call for. I feel that if they are still pretty soft, once folded into the batter it seems to not stay as fluffy. So super whipped egg whites are another trick of mine, but only whipped until stiff but still glossy, not dry.

I practiced the recipe a few times before photographing it. Not because the batter needed tested ( although I do test all my recipes several times) but getting used to flipping the pancakes was a little tricky. Especially since I made a filled pancake and I didn’t want the jam spilling out once I flipped them.  I used two small thin icing spatulas to flip them. I have seen on other sites for Aebleskivers that there are special tools to flip them, some people use chopsticks ( I tried that, didn’t work so well) or using butter knives to flip them. I used the two thin spatulas ( about 1/2′ wide) and it worked great.

Perfect, puffy round jam filled pancakes. I also loved that making this Aebleskiver recipe for Bonne Maman meant I had an excusd to finally buy this pan. I would have every breakfast making pan available if I had the kitchen space. I want like 4 other pancake pans, a few more waffle irons in little shapes, another griddle. I told you I love breakfast, and I love small appliances and specialty pans for those breakfasts.

The Aebleskivers do flatten slightly once cooled but not too much. They are a cross between a small jelly filled doughnut and a pancake. Seriously delicious. And its so easy to eat a huge pile of them at once. To up the extra jammyness ( probably not a real word but I like it) I also made a syrup with the four fruits jam. I added in some maple syrup and orange juice and heated it up. I could have eaten that with just a spoon. SO good!

Obviously I can go on and on about these pancakes. If you don’t have the pan, get one. Its so worth it and relatively inexpensive. I got mine off Amazon and I know several home stores like Bed Bath and Beyond carries it. You could also look on Ebay too. But trust me its so worth having the pan. My kids LOVE when I make them the little round pancakes and my 6 year old always asks for them to be filled with chocolate chips. Because chocolate chips is her jam, but she loves these four fruits jam filled Aebleskivers too. She was SO excited to see I used her favorite jam for these too.

Jam Filled Aebelskivers (Danish Pancakes) Makes 35-42 pancakes Each batch is 7 pancakes taking about 6 min each batch to bake.

Ingredients

  • 2 C all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 2 Tbsp Sugar
  • Zest of one medium orange
  • 2 cup buttermilk, well shaken, room temperature
  • 2 tsp vanilla extract
  • 4 eggs, separated
  • 3 tbsp melted butter, plus extra for pan
  • 1-2 13 Oz Jars of Bonne Maman Four Fruits Jam, divided
  • 1/4 c maple syrup
  • 3 tbsp orange juice
  • powdered sugar for garnish

Instructions

  • In a large bowl whisk together the flour, baking powder and salt. Combine the sugar and zest together in a small bowl and rub between your fingers to release the orange oils into the sugar, add that in to the flour mixture,
  • In a small bowl whisk together the egg yolks, butter, vanilla and buttermilk. Combine with the flour mixture and stir until well mixed.
  • Beat the egg whites until semi stiff peaks form ( just past soft peaks) and gently fold into the batter until almost no more white streaks are left.
  • Let sit for 5 minutes.
  • Preheat Aebelskiver pan. Brush each well with butter. Using a tablespoon and a half sized cookie scoop add a scoop to each well starting with one side and filling the middle last. Then spoon in a heaping teaspoon of the Bonne Maman Four Fruits jam into the center of each and top with a little more batter just to cover the jam. Let cook for about 2 minutes then using two this spatulas, chopsticks, butterknives really anything that will gently turn then and turn each one. Start by tipping it up so the uncooked batter fills the well and then flip all the way. Cook another 2 minutes. Flip again and make sure each side is evenly cooked, starting to turn light brown. Remove from the pan and repeat with the remaining batter and jam ( there will be left over jam) making sure to brush each well of the pan with butter before starting a new batch.
  • In a small pan add in 1/2 cup Bonne Maman Four Fruits Jam, the maple syrup and the orange juice, bring to a boil then simmer for a few minutes. Remove from heat and transfer to a small bowl
  • When the Aebelskivers are done, dust lightly with powdered sugar, drizzle with a little syrup and serve immediately.
  • Notes

    Notes: when turning the pancakes slide whatever utensil you have under the pancake to see if its starting to brown before flipping. Once flipping do so not too fast so batter doesn’t fling everywhere but also not so slow that the jam spills out. The jam might spill out a little b it once cooked ad that is ok. It takes a a few times to get used to flipping without too much spilling, but once you get out down its very easy to do.
