Chocolate Peanut Butter Sandwich Cookies.
Chocolate and Peanut Butter. Quite possibly everyone's favorite flavor combination. OR at least most people that I know have a hard time resisting. I know I did when I was flipping through my friend Miriam's cookbook, Something Sweet, and spied her Chocolate Peanut Butter Sandwich Cookies and I knew I wanted to make them. I am also making them in honor of this being her FIRST cookbook.
One of the neat parts of food blogging is that you get to make friends with other food bloggers from all over the country, and world even, and you get to know each other even if you don't meet each other in person. You get to "know" each other through social media, sharing recipes, ideas and often we ask each other for advice on recipes, photography, everything. One such friend is Miriam of Overtime Cook. She is an Observant Jew, lives in New York and we couldn't be more different, but our love of food, especially food photography, made us become friends. And now she is one of my go-to friends for food styling and photography questions and she does the same for me. Plus she is one of the nicest people I have "met" through the blogging world.
When Miriam told me she was writing her first cookbook and would be asking me for photo and styling advice I told her to ask me anytime. Now this is where having friends all over the country in the food blogging world helps. Miriam is up late baking, cooking and photographing for her blog and book because her time to do all of that is after work. She works a full time day job all week long and her Jewish faith has her offline and not working due to Shabbos every Friday evening until Saturday evening. This doesn't leave much daytime for her to work. And not many people on her side of the country are still awake when she is busy in her kitchen or studio. So that leaves me, living on the other side of the country, and 3 hours earlier, available for questions or advice.
I can't tell you how many times Miraim would text me pics of her recipes, including all of the ones one on the cover of her cookbook, and how I wished I was there in person to taste test them all! My jeans appreciate me not being able to taste test them all, but now that the cookbook is in my possession and I pretty much want to make ALL of the recipes, I might have to trade the jeans in for stretchy pants. Miriam is a kosher cook and baker, and while I didn't know much about Kosher cooking and baking before, I do know and find it very fascinating. These recipes are all kosher, dairy or Pareve, and easy to make. And very, very delicious.
When Miriam told me about these chocolate peanut butter sandwich cookies I was begging her to send me some, and she laughed saying that by the time they got to me I could have just made them myself. True, true. But less dishes to clean up when cookies are sent to me Vs me baking them. As soon as I got Something Sweet in the mail I looked for this recipe first. Who wouldn't want to make chocolate peanut butter sandwich cookies first?
The filling of these cookies is ahhhhhhmazing. Peanut butter marshmallow fluff frosting. Like a fluffernutter. But better. WAY better. I want to put this frosting on everything. Well, everything sweet. Peanut butter marshmallow frosting might be weird on a steak or spaghetti.
When I told Miriam these were the cookies I was going to make and FINALLY get to taste I told her I would have to take awesome pictures of them. I had to live up to her standards since all of the pictures in her book are gorgeous. Since Miriam works late at night she works with artificial lights whereas I am a natural light photographer and use window light for my photos. I can't tell in her photos that she is using artificial light, she is SO good with it. I hope I did good with my pics of her chocolate peanut butter sandwich cookies.
Chocolate Peanut Butter Sandwich Cookies
Ingredients
- 1½ sticks ¾ cup butter or trans-fat-free margarine
- ¾ cup creamy peanut butter
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ cup unsweetened cocoa powder
- 2 cups flour
- ½ cup peanut butter chips
- ½ cup chocolate chips
FILLING
- 1½ sticks ¾ cup butter or trans-fat-free margarine
- ¾ cup creamy peanut butter
- ¾ cup marshmallow fluff
- ¾ cup powdered sugar
Instructions
- Preheat oven to 350°F. Line two baking sheets with parchment paper; set aside.
- In the bowl of an electric mixer on medium speed, beat together butter, peanut butter, and sugars until creamy.
- Add eggs, vanilla, and baking soda, beating well to combine after each addition.
- Reduce mixer speed to low; add cocoa, then flour. Beat to combine. Stir in chips until evenly distributed.
- Using a small cookie scoop , drop dough onto prepared baking sheets. Bake for 8-9 minutes, until set. Allow to cool completely before filling.
- Prepare the filling: In the bowl of an electric mixer fitted with the whisk attachment, on medium speed, beat together butter, peanut butter, and marshmallow fluff until smooth. Add sugar; beat until fluffy.
- Assembly: Spoon or pipe the filling onto the flat side of a cookie; top with a second cookie.
Notes
These chocolate peanut butter sandwich cookies were are so so good. I told my husband to take them to work to share, he hid them in the freezer to keep them all to himself. So good, he didn't want to share.
