Classic Loco Moco. The quintessential Hawaiian meal and what makes it even better is this is a guest post by my awesome friend Samantha of The Little Ferraro Kitchen blog.
Samantha and I first " met" through the blogosphere and on Twitter and we hit it off talking about our love of Hawaii and Hawaiian food. I seem to always find the people that love and know Hawaii as well, if not better, than I do and we always become fast friends. Gotta love that Aloha spirit. Sam and I got to meet IRL ( in real life) a couple months ago when I was in So Cal for a friend's wedding close to where she lives. We met up for brunch ( I had eggs benedict - of course ha ha) and we did some trinket shopping in the surf shops before I headed home. It was like meeting up with an old friend; so great to sit and eat good food and talk story for hours. She is a doll and I was thrilled when she said she would love to do a guest post for me for my birthday month featuring pineapple, coconut and Hawaiian recipes this month. So without further adieu here is Sam..take it away sistah!
Hi Pineapple and Coconut friends! I am Samantha and I blog over at The Little Ferraro Kitchen. Shanna and I have a special…bond…an Aloha bond for our love for our favorite place in the entire world, Hawaii! I grew up in Hawaii as a teenager and my mom still lives there, so “local” food is in my blood!
So for Shanna’s birthday month, I couldn’t wait to post some local, ono grinds! Today on the menu, Classic Loco Moco! This is a staple on the islands. When I used to work as a waitress right out of high school, all the guys would order a loco moco after clubbin’ it. It is satisfying, hearty and takes me right back to the islands. I believe that the loco moco was invented for the hungry surfers after a good workout in the waves and since has been one of the most popular dishes made on the islands.
Typically, a loco moco is not very healthy..just being honest here! It is rice (or fried rice) topped with a hamburger patty, gravy and a sunny side up egg. And I was thinking of ways to “healthy-fy” the dish, but honestly, sometimes we just need to keep is classic.
"Recipe"
Classic Loco Moco (Guest Post by The Little Ferraro Kitchen)
Ingredients
- ½ lb ground beef
- ½ teaspoon soy sauce aka shoyu
- ½ teaspoon worcestershire sauce
- ¼ c breadcrumbs
- 3 eggs
- 1 cup white or jasmine rice cooked
- 1 Tb flour
- 2 Tb butter seperated
- ¾ c beef broth
- Green onions chopped for garnish
- Salt and pepper to taste
- Toppings: ketchup soy sauce, sriracha
Instructions
- ) In a bowl, combine ground beef, soy sauce, Worcestershire, breadcrumbs and 1 egg. Mix everything together until incorporated and form into 2 equal sized patties.
- ) In a hot cast iron skillet (if you have one), cook the burgers for 4-5 min on each side until desired doneness. When burgers are done, reserve to a plate
- ) In the same skillet, cook 1Tb butter and flour together until the flour is cooked off. Add beef broth and use a spatula to scrape the bits from the bottom of the skillet. Cook on high heat and allow gravy to reduce. It should be able to coat the back of a spoon.
- ) Finally, make a perfect sunny side up egg. In another non-stick skillet, add 1 Tb butter and allow butter to melt. Add 1 egg and cook until the whites are fully done. (I cook each egg separately).
- ) To assemble, Add rice to plate, top with burger patty then gravy and finally your egg. Garnish with chopped green onions and other toppings, such as shoyu, ketchup or sriracha.
Have fun with the toppings, sriracha, ketchup and soy sauce are all ono toppings to put on and make sure to crack the yolk and mix it with the burger and rice..the perfect bite!
