Blueberry Goat Cheese Grilled Bison Burgers. Just look at the epicness that is this burger:
When Kita of Girl Carnivore asked me if I wanted to participate in Burger Month , I said " heck yeah" because she always hosts an amazing month of burger goodness and a killer giveaway with all kinds of awesome prizes. I don't eat beef, but the rest of my family does, so when we make burgers we usually either make beef for everyone else and pork or bison ( also known as buffalo) for me. Or we do bison for the whole family. My kids have an amazing appetite and variety of foods they eat and they love all the burgers we make.
I used Wild Idea Buffalo ground bison for these burgers. They are an amazing company, the meat is high quality, 100% grass-fed and the animals are humanely raised and slaughtered. It's a very healthy meat to consume, high in protein and makes for one tasty burger. They also have other cuts of meat, their ribeye being another favorite of my family. Their ground meat is super tasty and versatile and I knew I wanted to make these burgers with it.
I lightly season the bison with Hawaiian red sea salt, ground black pepper, garlic powder and parsley. Since there are so many flavors going on with this burger, I didn't want the meat too heavily seasoned. I also season again once the patties are formed.
I love using this patty former when I want evenly shaped burgers that aren't way bigger or way smaller than the burger buns. I need an even ratio of burger to bun. Even though it never seems to work when I eat the burger. I always end up with less top bun than anything else.
I lightly toasted the buns on the grill before building the burger. And as soon as I smeared the bottom bun with this insanely delicious vanilla blueberry goat cheese, I decided to make a fun burger building gif for you all. I have been in the gif making mood lately.
Fun right? Yay burgers!! I get the blueberry goat cheese from Trader Joe's. Its great in salads as well as a spread for burgers. It's not super sweet and it really goes well with the bison, sweet grilled red onion and spicy anaheim peppers. I am a big fan of grilled veggies on burgers as well, especially onions and peppers.
Of COURSE when you have epic grilled bison burgers for a meal you have to have cold beers, salty potato chips ( currently obsessed with these Surf Chips I that are cooked in coconut oil) and a dill pickle slice to go with them. Sometimes I like fries with burgers, depending on the burger and the fry, but for the most part I like salty chips to go with them.
When Kita/Girl Carnivore called for EPIC burgers, I had to deliver. I think this is the most epic burger I have made yet.
Blueberry Goat Cheese Grilled Bison Burgers
Ingredients
- 1 lb Wild Idea ground bison/buffalo
- 1 teaspoon sea salt
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon dried parsley
- ½ c Blueberry Goat Cheese *
- 1 Heirloom tomato cut into ¼ inch thick slices
- 1 red onion cut into ¼ inch thick rings
- 2 Anaheim chiles cut into ¼ inch thick rings, 10-12 rings
- 2-4 sections of green Leaf lettuce
- 2 Burger buns
- Mustard and mayonnaise - optional
- Serve with :
- Chips
- Dill pickle slices
- cold beer - I love Kona Brewing Co Wailua Wheat
Instructions
- If the meat is frozen thaw in the refrigerator then let sit at room temperature for 30 minutes. Place meat in a bowl and add the salt, garlic powder, black pepper and parsley and mix slightly with your hands. Form into two patties, by hand or with a patty former and let rest on a baking sheet. Season again with just little more salt, pepper garlic and parsley.
- Preheat grill to Medium- high, 425 Deg F, clean grates and spray or brush with oil, I like using avocado oil, and place the burger patties on the grill along with the onion rings and Anaheim chile rings. Spray the onion and chiles with a little oil once they are on the grill.
- Grill the burgers for 5-6 min a side, flipping once for a medium well done burger. Flip the onions once about a 5 minutes as well being careful to keep the rings intact and flip the chiles 2-3 times, moving to a cooler part of the grill if they start to get too charred. Total of 10-12 min cooking time for the burgers, onions and chiles. Remove everything carefully from the grill and let rest. Lightly toast the buns on the grill about 1-2 minutes, cut side down.
- Prepare the burgers.
- Spread half the goat cheese on the bottom bun, top with a grilled bison patty, a thick tomato slice, a few grilled Anaheim chile rings, one thick grilled red onion slice, lettuce and if you want to spread some mayonnaise or mustard on the top bun then go for it. Serve immediately with chips, dill pickles and cold beer.
