Aloha from the Big Island of Hawaii!! Taking break from the beach to bring you my newest summer cocktail. Pineapple White Wine slushies. So simple they almost don't need a recipe, but I give variations to make them customizable to your tastes. Our first trip of the summer has been amazing. We had 7 lovely days on Oahu and now are on the Big Island for another 9. Working hard pays off!
When tePā winery sent me some wine a little while ago I made that delicious white wine clam pasta dish with their Koha Sauvignon Blanc and I made these pineapple white wine slushies with some pineapple I had sliced and frozen. I made it with their Pinot Gris and it went with the pineapple perfectly!
I also needed an excuse to use these pineapple cups I bought from Cost Plus World Market and Homegoods recently. Pineapples are the "IT" fruit of summertime so there is no shortage of all things pineapples in stores. Which makes me happy, even if my wallet disagrees and my husband gives me side eye for filling our house with more and more pineapple things each week. Ha!! I do wish there were more things coconut in stores. The pineapple is way more popular.
Making these white wine pineapple slushies couldn't be easier. Peel, cut out the core ( or keep if its an extra sweet pineapple) and cut into slices. Freeze on a parchment or wax lined baking sheet and keep frozen until ready to use. You can use a variety of pineapples as far as ripeness levels go. less ripe or borderline too ripe. All will lend a different level of sweetness to the slushies.
Place frozen pineapple in a blender and add bottle of chilled Pinto Gris. Blend. In the words of Ina Garden " how easy is that?"
The sweeter the pineapple you use the sweeter the slushy. If you prefer an even sweeter drink or if your pineapple isn't quite ripe add in simple syrup. I am making pineapple white wine slushies while in Hawaii since we have a blender at the house we are staying at, an abundance of amazing white sugarloaf Hawaiian pineapples. I haven't found tePā Pinot Gris in stores on the Big Island but there are some local Maui wines. Which are really delicious too.

I wish I could bring home these amazing white pineapples we have here on the Big Island. Unfortunately Agriculture says I can't bring them home. They do have Ag inspected and approved pineapples, but they are usually the Maui golds. Which I love, but the white ones are even sweeter and less acidic. I can eat a whole pineapple in one sitting, well almost a whole one they are usually 6 lb pineapples. Huge! But I do have a healthy portion with breakfast. Since they are low acid they don't tear up the inside of your mouth or tongue like other high acid fruits.
Pineapple White Wine Slushies
Just two ingredients for these amazingly delicious and refreshing wine slushies
- 5-6 cups pineapple ( 1-2 pineapples depending on size)
- 1 bottle tePā Pinot Gris ( or other Pinot Gris) well chilled
Remove the stem and peel the pineapple. Or pineapples if using smaller ones. Quarter and slice out the core. If the pineapples are less ripe/sweet save the cores or compost. Slice the quarters into wedges and freeze. This can be done a day, a week or even a month ahead of time. You could freeze several sliced pineapples at once if you have the freezer space.
Place 6 cups of pineapple in a blender and add in the bottle of Pinot Gris. Blend until thick. Taste. If a sweeter drink is desired add in a little simple syrup or pineapple juice. Pour into glasses, garnish with a pineapple wedge and a sprig of fresh mint and enjoy!
Like I mentioned in the post the possibilities really are endless. I love to add a little fresh lime juice or sweetened calamansi lime juice. You could add in coconut water or even coconut milk for a Pina colada like slushy. Mango or passion fruit juices are also excellent along with the white wine.
