We love all forms of pulled pork in our family. From my Hawaiian Style Kalua pork made in the slow cooker to Mexican Style made in our pressure cooker, and smoked like we made for these Beer Pulled Pork Polenta Bowls.
Pulled pork is a favorite base for so many meals we make. We even make it for posole. My husband says posole is one of his top five favorite meals we make. When I was thinking about making this dish for Father’s Day I knew a play on posole would be amazing. Instead of it being a stew or soup like meal we used a thickened red chile sauce over polenta with the polenta replacing the traditional hominy in posole.
We cooked the pork in our smoker with spices and beer from Cost Plus World Market. I was so tender and shredded easily with the pork and the flavor from the spices, beer and smoker made it one of the best pork shoulders we had ever cooked.
I topped the dish with traditional Posole toppings of diced onion, thinly sliced radish, sliced cabbage and cilantro. This has become one of our favorite dishes to make and one I will be making for my husband for Father’s day, probably every year from here on out.
My husband loved this dish and I told him it was my recipe for him for Father’s Day that I was testing out early to make sure it was perfect. He said I could test it out weekly if I wanted to since it was a winner. The way to his heart is definitely through his stomach.
