Strawberry Coconut Lime Popsicles. I love making homemade popsicles and these sweet treats are only a few fresh ingredients and a few hours from start to finish!
It's been HOT this summer. Like an eat popsicles for 3 meals a day hot summer. It hasn't gotten below 100 deg in weeks during the day. I am not complaining, I love the heat here. The whole south west summer "It's a dry heat" weather really isn't THAT bad. I would DIE in major humidity like the south and east have. I can't deal with it, and no one needs to see what it does to my hair. So when life gives you 100+ deg days - you make popsicles like these strawberry coconut lime popsicles.
I make popsicles several times a week for my kiddos ( and myself), I literally have 6 different types of popsicle molds. I am a popsicle making machine I tell ya. So when I decided to make these the other day I didn't even go off of a recipe, I just put together a few things I had on hand that sounded popsicle worthy. I almost always fully puree the mixture in my vitamix before I pour into the molds but this time I decided to just barely pulse them so there were still chunks of fresh strawberries. I wasn't even planning on blogging them until I tasted the small amount that was left that wasn't enough for another full sized popsicle. Wow. Amazing.
I also tortured my kids with these. They wanted to eat them the second I made them. They are young and still don't quite grasp the concept that they can't have EVERYTHING they want right then and there. The wait to freeze popsicles is brutal to them. This is why I have so many molds so I have a never ending supply of popsicles. We truly eat them year round.
Day two set up everything for my popsicle photoshoot again. Including another carton of strawberries that I made my husband pick up at the store for me since my almost 5 year old stole the WHOLE carton when I wasn't looking and at them. All. My kid ate my props....
Strawberry Coconut Lime Popsicles
Ingredients
- 2 cups full fat coconut milk
- ½ c strawberry puree **
- 1-2 tablespoon simple syrup optional
- Juice from half a large lime
- 2 cups strawberries stems removed, roughly chopped
Instructions
- For the strawberry puree combine 1 cup stemmed and hulled strawberries with 2 tablespoon sugar and ½ c water in a saucepan. Heat to a simmer and mash the berries to release their juices. Transfer to a blender and puree. Chill in an airtight container until cold, 2-3 hours. Can be made a day ahead of time. You will have some puree leftover for a second batch of popsicles.
- Combine the coconut milk, strawberry puree, simple syrup and lime juice in a blender and blend well. Add the chopped strawberries and pulse a few times just to chop the strawberries more, don’t blend them fully. You want little chunks of strawberries.
- Pour into popsicle molds and freeze at least 8 hours.
- To unmold the popsicles, run the bottom of the mold under lukewarm water until the popsicles start to release. Popsicles can be stored in the popsicle mold in your freezer or in a resealable freezer bag or container. I recommend in a freezer bag so you can reuse the popsicle mold immediately for more popsicles.
Notes
The Tovolo groovy pops, like the ones I used here, are great for kids an unmold really easily. The Norpro pop maker, makes more at a time and needs a wooden popsicle stick and are slightly harder to unmold but make the classic popsicle look like in my Paletas I made for Cinco De Mayo. We also have star pops, ones that look like ice cream cones etc. Like I said, I am a popsicle making machine. So expect more popsicle posts this summer.
