    Sweet Mint Lassi Drink - Pineapple and Coconut

    Sweet Mint Lassi is a refreshing minty yogurt drink. 

    I am on a lassi kick this month. I really like how refreshing these drinks are and the fact that you can make them any flavor you like.

    I made the mango lassi a few weeks ago and talked about how there were also mint lassis served at the wedding I went to. So here is my version of the sweet mint lassi. I am not a HUGE fan of mint ( I blame it on a bad mojito once that tasted more like toothpaste than a yummy cocktail) so I added in less mint than most recipes call for. But that is just my personal preference. If you love the mint - go for it and add more! I made it similar to the mango one using coconut milk, honey and cardamom. I am really loving that flavor combination in these drinks. These lassis really are versatile and you can make the pretty much anyway you want, its basically a yogurt based drink, I think the possibilities are endless!!

    I still love mojitos though. I can't let one bad one ruin them for me forever. I just order them light on the mint. I have had some amazing tropical mojitos in Hawaii before. Cocktails I definitely need to recreate for my blog.

    The mint lassi that I had at my friends wedding had a sprinkle of saffron on them. This is entirely optional when making the drinks. Saffron isn't the cheapest of ingredients, but I like the flavor and the pop of color it adds. You can always save some for making Paella.

    I was trying to catch good light for these and while I was waiting the saffron was bleeding out into the lassi. I thought it looked cool , however when I loaded up my pics not all were optimal and I decided to take another set and I scooped out the saffron and started over since I liked how they looked with the saffron freshly sprinkled on top. That's why these look different. I had to shoot quickly since it is starting to warm up here in Vegas. Taking pics of ice cream, smoothies and popsicles is challenging in summertime here. I should just make all my summer items in winter! But I am not that organized ha ha. And I know its technically spring ( and still snowing in some parts of the country) but its already been in the 80's here!! ( Yes I am LOVING it) so bring on the frozen treats!!

    Sweet Mint Lassi Recipe

    Shanna
    A refreshing yogurt based drink made with honey,mint and cardamom.

    Prep Time 5 minutes mins
    Total Time 5 minutes mins
    Servings 2

    Ingredients
      

    • 2 cups organic plain yogurt, Greek or regular
    • ½-1 cup coconut milk, full fat, us more if using a thicker yogurt like Greek
    • ¼ c-⅓c honey
    • ¼ teaspoon cardamom
    • Several mint leaves
    • ½-1 c ice
    • Saffron and more mint for garnish

    Instructions
     

    • Combine all in a blender except the saffron, using the smaller amounts of the ingredients listed. If desired add more honey, mint, cardamom until you reach preferred taste. Pour into glasses, garnish with saffron and mint and serve immediately.
