White Bandido Cocktail
Merry Christmas eve! Time to celebrate all day with cooking, baking, present wrapping and my latest cocktail creation, the white bandido cocktail.
This month has been a whirlwind of activities, lots of work, not much time off, kids activities etc etc etc that it really seems Christmas snuck up on us. Free time? What's that? Its been way too crazy and we are trying to really slow it down for the next week and a half of school break. Last week we were able to slow down a little and head over to my friend Alejandra's house for some amazing homemade authentic pozole that she made. It was so nice to hang out, have adults to chat with, have our kids play and eat good food. I can never show up to a friends house empty handed so I brought over cocktail ingredients to make this drink.
I had made my friend Jen's Horchata ice cream for Alejandra's baby shower a few months ago and one of the ingredients was Rumchata. The recipe only called for a little bit, the bottle is big, so I looked around online to see what drinks are made with it. I tried it in a White Russian and it was SO good. BUT, I thought it would be even better made with silver tequila instead of vodka and this amazing coffee liqueur by Patron instead of Kahlua, Patron XO Cafe. Like a Mexican White Russian. But the name Mexican White Russian didn't sound quite right. Calling it a White Mexican sounded a little un-PC so I asked a few friends what to name this drink.
I thought of "South of the Border White Russian" but that reminded me of Taco Bell, and, well, gross. My friend Brandon suggested White Bandido since the rumchata is rum based and Pirates and Mexican Bandits drank rum, so Bandido is a nod to the Mexican ingredients and "White" is a nod to the original drink. So I have a somewhat politically correct name to an insanely tasty cocktail.
A little sprinkle of cinnamon on top and I am ready to sip on these White Bandido cocktails and get back to wrapping more presents. Next year, gift bags for everyone. Now where did I put the tape...
White Bandido Cocktail
Ingredients
- 4 ounces Silver Tequila I used El Padrino
- 2 ounces Patron XO Cafe
- 2 ounces Rumchata
- 2-3 tablespoon Heavy Cream
- Cinnamon
Instructions
- Fill two rocks glasses with ice. Add in the tequila, Patron XO Cafe then the rumchata and stir. Add in cream to amount desired, stir again. Serve. You can also make the drinks in a cocktail shaker filled with ice - just add the cream once strained into the glasses then stir.
