    Summertime Grilled Hobo Pies and Berries in Red Wine Syrup

    YAY!! Its finally summer!! One of our first fun meals of the summer are these grilled hobo pies for an outside bbq brunch. Also? Mimosas ( of course) and berries with red wine syrup and the berries are cooked on the grill as well. I am all about grilling everything this summer, I wouldn't mind one bit if my oven stays off until fall. Bring on the grilling season!!

    We have been working on our summer "bucket list" and last week we got to check one of them off the list. Family beach vacation. It was a short trip, but a fun one nonetheless and I will be posting about it soon!! Other items on our list are lots of outside meals, my kids love having dinner on the back patio and I thought why not have breakfasts outside too? The weather is cooler early in the am ( when they wake up) so we have started having patio breakfasts.

    When Cost Plus World Market asked me to make a fun recipe for their Summer Getaway sweepstakes ( Enter HERE) I knew I wanted to do a fun camping or glamping ( Glamorous camping) meal. I decided to do a DIY Hobo Pie bar ( They're basically french toast sandwiches but made in these awesome Hobo Pie makers and grilled) and then to make it more "adult" add in mimosas and foil pouches of summer time berries to be grilled as well with a red wine syrup ( Don't add the syrup for kids, obviously).

    The combinations are pretty much endless with hobo pies. Sweet or savory, I decided to go the sweet route with using fresh brioche and an assortment of fillings such as jams and curds and chocolates.

    We made a bunch of different flavor combinations such as lemon curd with coconut white chocolate, strawberry champagne jam with strawberry and champagne dark chocolate, maple bacon with salt caramel syrup, and probably my favorite was the raspberry curd with lindt dark chocolate ( I forgot to add in the Lindt dark chocolate to my photo above - oops!) and fresh raspberries. Seriously amazing.

    Another fun combo was biscoff, the Sunset Banana chocolate and fresh banana slices. Like a grown up peanut butter and banana sammich.

    Since the hobo pies are essentially dessert ( at least the way I made them for this post) I wanted to add in something healthy-ish. So I decided to make some foil packets of fresh farmers market berries. Some I grilled with just a little honey (for the kids) and some with a red wine syrup ( for the adults) and I am glad I did.  These would be awesome over yogurt or ice cream even.

    The trick to these is plenty of butter so they don't stick to the hobo pie makers.

    I had never made hobo pies before but my husband had experience with them as a kid so he was more than happy to help man the grill. He set up our World Market Hibachi with charcoal and got to grillin'.

    Clearly my hibachi is well loved. When I was a kid I had a good friend who lived in a condo and her parents had a hibachi since they didn't have much of a yard. I thought that was the coolest thing ever. Little did I know was that they had it since they didn't have much space, not for the cuteness factor, but still, I thought it was cute and had always wanted one. I got this for my post for last summer's world market giveaway, and I am excited to use it again for this post. Its a great grill to bring camping, to the beach or park.

    "Recipe"

    Summertime Brunch Grilled Hobo Pies and Berries with Red Wine Syrup #SummerGetaway

    Grilled Hobo Pies and Grilled Berries in Foil One loaf of bread makes about 10 Hobo Pies.

    Servings 10

    Ingredients
      

    For the Hobo Pies

    • 1 loaf of Brioche Or bread of choice, sliced into about ½” thick slices
    • Butter
    • Fillings:
    • Any jams spreads, peanut butter, curds of choice
    • Fresh fruit and berries
    • Chocolate sectioned into squares
    • For the Berries:
    • Assortment of berries such as strawberries blueberries, raspberries and black berries
    • Honey
    • Red Wine
    • Sugar

    Instructions
     

    For the Hobo Pies

    • Preheat grill ( Either a gas grill or prep a charcoal grill until coals are hot)
    • Take two slices of bread and spread both sides with jam or whatever filling of choice, top one side with a few chocolate squares, the other with fruit or berries and close up. Butter one side and carefully place that side down in the hobo pie maker, then spread butter on the top side. Close the hobo pie maker and trim off any excess bread sticking out. Place in a hot grill and grill for 3-4 min a side. Checking after a few minutes to make sure they are crispy. Let rest a few minutes and carefully remove to plates, being careful as the hobo pie makers are very hot. Slice sandwiches in half and serve immediately.

    For the grilled berries:

    • Place about 1 cup of mixed berries on a square of foil that is large enough to wrap around the fruit leaving it open at the top, drizzle with honey or a little red wine syrup. Repeat with as many as you want depending on how many servings you make. 1 cup plus some honey or syrup equals one serving. Grill the berries in foil for about 8 min as well. Serve in foil pouches

    Red Wine Syrup:

    • cup red wine ( Sweet red wine preferably)
    • /3 c sugar
    • Bring to a boil in a sauce pan and them simmer for about 10 min until reduced and thickened. Transfer to a jar or bottle to let cool and thicken up more.
