Orange Sesame Grilled Salmon

A quick, healthy salmon dinner, that is delicious and one of my husband’s specialty recipes. When he has a free night to cook, which I love since he has a damn good cook, this is one dish he often makes.

They say the way to a man’s heart is through his stomach, so to be a good girlfriend , wife or significant other you should cook him good meals.  I don’t know who came up with that phrase or where it came from, but  I find it rather silly since it was my husband’s cooking when we first started dating that won my heart over. I am a lucky woman since my husband is such a fantastic cook, in fact, he probably cooks dinner more than I do!  So I have decided to start featuring the meals he makes here on my blog, like this dish he makes often and we all love it so much, orange sesame grilled salmon.

Often during dinner prep hour I am either photographing a recipe since the light is good at that time or working on editing photos. The kids get to watch a movie and my husband makes dinner. We don’t have regular tv service or cable, we have Netflix and movies. This is both good and bad. Good since nothing good is on TV, its expensive and my kids never see commercials. Bad because they have watched Frozen 8,374,869 times and I wish they would just Let It go…..  Other times my husband and I will cook dinner together and get the girls involved with meal prep or they wash dishes. Also known as waste all my dish soap in 5 minutes. Hey its better than listening to Frozen, again.

I can’t even count how many times we have had this meal. Its one of our regular dinners. My  husband and I have always been huge fans of salmon, and a dream of ours is to go salmon fishing in Alaska one day. I have a good friend that grew up in Alaska and used to go salmon fishing all the time. I keep telling her we need to make trip up there with her family and ours so we can all go fishing. She gets totally spoiled when her dad, who is a commercial fisherman, ships salmon to her overnight. She has to go pick it up at the airport but its so worth it since she gets shipped white king salmon which is hands down the most amazing salmon ever.  Like buttah.

While wild king salmon is our first choice, which is the salmon used in this recipe, it is often a bit on the pricey side, so we eat Coho or Copper River salmon more often. We definitely were spoiled when we lived in the pacific northwest and got to have fresh wild local salmon often. One place we loved to go to was the famous Pike’s Market in Seattle. I got to throw a fish once! It was a gorgeous steelhead that we had packed on ice and we drove it home to Portland for good eats for days. Such a great market. We don’t have any markets like that here in Vegas, at least not that I am aware of, and I am traveling to Seattle this fall for the International Food Bloggers Conference and I am hoping to be able to stop by Pikes, throw a salmon or two and get one to ship home.

One thing I love most about salmon is how my husband makes it. He always grills or smokes it and its always perfection. There are a few items I can cook ok, but he cooks way better, and grilled salmon is one of his specialties. So he always cooks salmon when we have it for dinner. Which is awesome because its so super healthy and always tastes so good. Even the kids can’t get enough of it – grilled salmon for the win!

Orange Sesame Grilled Salmon

Orange Sesame Grilled Salmon Makes 6 servings

Ingredients

  • 2 cups organic orange juice
  • 1/2 c organic gluten free Tamari ( or soy sauce)
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp Mirin ( Japanese cooking wine)
  • 4 cloves garlic, peeled and minced
  • 1 tsp freshly ground black pepper
  • 6 - 6 ounces wild salmon filets (King, Coho, Copper River)
  • 2 red bell peppers, thinly sliced into matchsticks
  • 1 medium red onion, peeled and thinly sliced same as bell peppers
  • 2 medium zucchinis, cut in half, thinly sliced same as peppers and onion
  • 1 Tbsp coconut oil
  • Steamed white sticky rice

Instructions

  • Combine all the marinade ingredients in a bowl and whisk well, pour half of the marinade into a shallow dish. Rinse the salmon and pat dry gently with paper towels, checking for any bones and remove if there are any. Place the salmon in the marinade dish skin side up and let marinate for one hour.
  • Heat the remaining marinade in a small sauce pan over medium high heat stirring occasionally until reduced by half. Remove from heat.
  • Preheat a grill on high. Place the salmon skin side down on the grill and reduce heat to medium. The fish will take about 10-12 minutes to cook depending on the thickness of the cuts. It is ready when most of the fat has risen to the top of the filet and the fish flakes easily with a fork.
  • While the fish is halfway through grilling cook the vegetables. Heat the coconut oil in a sauté pan over medium high heat and add the sliced vegetables. Stirring often for about 3-5 minutes, until slightly browned but still crunchy
  • Divide white sticky rice amongst bowls, top with the vegetables, a salmon filet and spoon over the remaining reserved sauce. Serve immediately.

    I am such a lucky girl to have such an amazing husband that has many many talents. I will be featuring his recipes more often here, because its about dang time I did!!  I have to say too that he is pretty stoked to be helping me with my blog. He is always saying he wished he could help more and since neither of us know the technical side of blogging very well ( I have no clue what HTML means, how to customize my blog, how to optimized SEO etc) I think contributing with all his awesome recipes is more than knowing the technical side.  So for all of his recipes he creates and cooks them, I style and photo and to me that makes a pretty darn good team!!
