Chocolate Frosted Fudgy Brownies with Strawberries
It is that time of year again! Galentine's Day!! From Parks And Recreation: " What’s Galentine’s Day? Oh, it’s only the best day of the year. Every February 13th, Leslie Knope and her lady friends leave their husbands and their boyfriends at home and just kick it breakfast style. Ladies celebrating ladies. It’s like Lilith Fair, minus the angst. Plus, frittatas! " Or in this case Chocolate Frosted Fudgy Brownies with Strawberries!!
This is the third year a group of us lady blogger friends have gotten together to bring sweet treats for you all in honor of Galentine's Day. Last year I made a fun tropical bourbon cocktail, two years ago a chocolate strawberry martini. This year I went with the chocolate strawberry theme again but in the form of frosted fudgy brownies.
I am not the biggest fan of chocolate, but I make an exception for brownies. Especially fudgy brownies. Some people prefer the more cake like, I love the dense, ooey-gooey fudgy kind.
I am spending this Galentine's day with my two fave gals, my daughters. They have been my Galentine's date for quite some time now and they are at the ages where they can help me in the kitchen especially with baking. So when I say " hey girls want to bake brownies? ( Or cookies, or cupcakes or whatever) they are all about it. They are best taste testers as well as kitchen assistants. Who can blame them for wanting to help when things like brownies are payment?
I made this batch of brownies a small-ish batch ( in a 9x9 pan) since I was planning on frosting them, a small square is plenty without being too overly rich and sweet. And each square of fudgy brownie gets a heart shaped strawberry. Perfect for Galentine's day. Or Valentine's day. Or any day, really.
Chocolate Frosted Fudgy Brownies with Strawberries
Ingredients
- 1 cup All-Purpose Flour
- ⅓ cup cocoa powder
- ½ teaspoon salt
- 1 cup butter 8 ounces
- 8 ounces dark chocolate chopped
- 1 ¾ cup granulated sugar
- 2 large eggs room temperature
- 1 teaspoon vanilla
- 1 and ½ cup strawberries stems and hulls removed, sliced
For the Frosting:
- 4 ounces butter softened
- 4 ounces cream cheese softened
- ½ c cocoa powder
- 3 ounces bittersweet chocolate melted and slightly cooled
- ¼ teaspoon salt
- 2 ½ c powdered sugar
- 8 Strawberries tops cut off, sliced in half and cut into hearts for topping
Instructions
- Preheat oven to 350 Deg F. Prepare an 8x8 or 9x9 square baking pan with butter then parchment paper so the paper hangs over the edges to make it easier to lift the brownies out once ready.
- In a large bowl whisk together the flour, cocoa powder and salt. Set aside
- In a pan over medium low heat, combine the butter, chopped dark chocolate and sugar and stir until well combined and the sugar is dissolved. Set aside and let cool for 10 minutes. In another bowl whisk the eggs and vanilla together and add in the cooled melted butter mixture. Mix together well and then add into the flour mixture. Combine until just moistened. Fold in the sliced strawberries. Pour into prepared pan, smooth the top with a spatula and bake for 35-40 minutes or until the middle is set and a toothpick comes out clean when testing the middle. Let cool completely before frosting
- To make the frosting: Combine the butter and cream cheese either in the bowl of a stand mixer or a bowl and use a hand mixer to cream together. Add in the cocoa powder, melted chocolate and salt and mix well. Add in the powdered sugar ½ of a cup at a time until you reach desired level of sweetness. Frost the top of the brownies in the pan in an even layer ( you may have leftover frosting) and decorate with strawberry halves. Chill for one hour. Removed the brownies from the pan using the parchment paper and place on a serving tray. Slice into squares and serve.
